Spooky TREATS Witches' Fingers Makes 60 cookies 1 cup butter, softened 1 cup confectioners' sugar 1 egg 1 teaspoon almond extract 1 teaspoon vanilla extract 2 ²/³ cups all-purpose flour 1 teaspoon baking powder 1 teaspoon salt 7 drops green food coloring ¾ cup whole almonds 1 (.75 ounce) tube red decorating gel Combine the butter, sugar, egg, almond extract and vanilla extract in a mixing bowl. Beat together with an electric mixer; gradually add the flour, baking powder, salt and green food coloring, continually beating; refrigerate 20 to 30 minutes. Preheat oven to 325 degrees F. Lightly grease baking sheets. Remove dough from refrigerator in small amounts. Scoop one heaping teaspoon at a time onto a piece of waxed paper. Use the waxed paper to roll the dough into a thin finger-shaped cookie.Press one almond into one end of each cookie to give the appearance of a long fingernail.Squeeze cookie near the tip and again near the center of each to give the impression of knuckles. You can also cut into the dough with a sharp knife at the same points to help give a more finger-like appearance. Arrange the shaped cookies on the baking sheets. Bake in the preheated oven until the cookies are slightly golden in color, 20 to 25 minutes. Remove the almond from the end of each cookie; squeeze a small amount of red decorating gel into the cavity; replace the almond to cause the gel to ooze out around the tip of the cookie. Chancellor Cocktail 2 ounces Scotch (The Famous Grouse preferred) 1 ounce Sandeman Founders Reserve Port ½ ounce Carpano Antica Sweet Vermouth 2 dashes Angostura Bitters Build in a chilled mixing glass, add ice and stir. Strain into a classic martini coupe or cocktail coupe. Port is a fortified wine from the Douro Valley, in the northern providences of Portugal. Fortified halfway through the distillation, the end result is a sweeter, stronger product. This vintage cocktail has stood the test of time, even though its original creator is unknown. Arcade Cocktail 1 ounce Blanco Tequila ¾ ounce grapefruit juice ¼ ounce simple syrup 2 dashes of Peychaud Bitters 4 ounces champagne or sparkling wine Grapefruit peel for garnish Build first four ingredients in a shaker tin, add a few ice cubes, quick hard shake, then strain and pour into a chilled coupe or champagne goblet and add champagne.Drop in a grapefruit peel. Grapefruit and Peychaud Bitters pair extremely well and the addition of bubbly brings forth the aromatics of the fruit and inherent sweetness present in the cocktail. Tall glassware (e.g. champagne goblet) facilitates effervescence. This cocktail was created by Christopher as Arcade’s signature drink. A cool drink offers a welcome respite to the end of a long day, and at Arcade Midtown Kitchen, in the trendy Pearl district in San Antonio, slowmelting, hand-chipped ice balls keep cocktails chilled without compromising (diluting) the alcohol or flavors. “We chip about 100 a day,” said Christopher Ware, bar manager. “The goal is to end up with a ball of ice that touches the glass on three sides.
